Texas Tamale Pie
Topping: *Kids Version is Jiffy Cornbread Mix - 3 Tbsp melted butter - 3 eggs - 3/4 cup light coconut milk - 1 ½ cups almond flour - ½ cup coconut flour - 3 tsp baking powder - ½ tsp salt - ¾ tsp paprika Filling: - 3 lbs ground beef - 2 cans Hatch green chilis - 4 Tbsp tomato paste - 1 can beef broth - 2 tsp salt - 1 tsp pepper - 2 tsp chili powder - 1 tsp ground cumin - a few shakes of cayenne pepper
1. Preheat oven to 375 degrees 2. Prepare the crust and set aside (mix wet ingredients and then add dry) 3. Brown the ground beef 4. Add chilis, tomato paste, broth, and spices 5. Simmer for 3 minutes 6. Spoon mixture into pan and add topping, top with cheese 7. Bake for 20 minutes, enjoy!
